Serves 4-6:
1 kilo of chicken filets, cubed
1 pot of pesto
2-3 tablespoons of (olive) oil
2-3 cloves of garlic
500ml cream (for cooking)
1 Chillie pepper (optional)
Salt and pepper
1 stalk of celery, diced
1 carrot, diced
1 onion, diced
100grams of pine nuts for decorating (optional), toasted
Method:
Mix the chicken with the pesto, if needed thin the pesto with some oil.
Set aside as long as you can to marinate.
In a pan heat oil, put in the vegetables and chilli pepper is using, season to taste.
Let simmer for about 5 minutes until the vegetables have soften.
Add the cream and the chicken, heat chicken until cooked (about 10 minutes).
Serve with potatoes, rice or pasta.
