Serves 4:
(olive) oil
4 big or 8 smaller sausages
2 big carrots, sliced
2 onions, finely chopped
2 tbsps red wine (vinegar) (I used red wine)
4 cans of mixed beans (each can about 400grams)
400ml (chicken or beef) stock
100grams of frozen peas
2 tbsp French mustard
Method:
Heat oil in a pan and brown the sausages on all sides. Remove from pan
Drain the beans and rinse them.
In the same pan you browned the sausage in, add the carrots and onions and let soften for 8-10minutes.
Deglaze with the red wine (vinegar) and let alcohol evaporate, then return the sausages to the pan.
Add the beans, pout over the stock and let heat through fora bout 5 minutes with a lid on the pan.
Just before service add the frozen peas, the mustard and season to taste.
Serve with mashed potatoes or crusty bread

Tips: I used red wine as I had some left, Works as well.
Beware of oil splattering all over your arms and kitchen, it spits vigorously!
