If, like me, you’re looking for ways to use the odd courgette or twenty and allt he tomatoes you’re collecting now, this might be a nice, quick way to cook up a wholesome dinner after the hard labour at the lottie 😉
Done in 15 minutes.
Serves 2:
1 small onion (50grams)
1 small courgette (150grams)
300grams tomatoes, preferibly steak
1 stock cube
500ml water
170grams of dried pasta of your choice or spaghetti
2 cloves of garlic
2 tablespoons of (sunflower) oil
20grams of Parmesan cheese or Grana Padano, grated
Salt
Chilli or black papper
Basil chopped
Method:
Chop the onion finely, chop the tomatoes, dice the courgette.
Heat oil in a large casserole style pan (with a lid).
Add the onion, garlic, courgette and if using the chill pepper, let cook until golden brown.
Add the tomatoes, stockcube, pasta and water.
Put the lid on the pan and let simemr on low heat fora bout 10 minutes, until the pasta is cooked.
Add cheese and chooped basil.
