If, like me, you’re looking for ways to use the odd courgette or twenty and allt he tomatoes you’re collecting now, this might be a nice, quick way to cook up a wholesome dinner after the hard labour at the lottie \ud83d\ude09<\/p>\n

Done in 15 minutes.<\/p>\n

\"allesineencourgette\"<\/a><\/p>\n

Serves 2:<\/p>\n

1 small onion (50grams)<\/p>\n

1 small courgette (150grams)<\/p>\n

300grams tomatoes, preferibly steak<\/p>\n

1 stock cube<\/p>\n

500ml water<\/p>\n

170grams of dried pasta of your choice or spaghetti<\/p>\n

2 cloves of garlic<\/p>\n

2 tablespoons of (sunflower) oil<\/p>\n

20grams of Parmesan cheese or Grana Padano, grated<\/p>\n

Salt<\/p>\n

Chilli or black papper<\/p>\n

Basil chopped<\/p>\n

Method:<\/p>\n

Chop the onion finely, chop the tomatoes, dice the courgette.<\/p>\n

Heat oil in a large casserole style pan (with a lid).<\/p>\n

Add the onion, garlic, courgette and if using the chill pepper, let cook until golden brown.<\/p>\n

Add the tomatoes, stockcube, pasta and water.<\/p>\n

Put the lid on the pan and let simemr on low heat fora bout 10 minutes, until the pasta is cooked.<\/p>\n

Add cheese and chooped basil.<\/p>\n
