Serves 4:<\/p>\n

\u00bd a jar of sundried tomatoes on oil( mine was 180gr), chopped<\/p>\n

1 kilo of floury potatoes<\/p>\n

2 tablesppons of oil or butter<\/p>\n

500grams leeks<\/p>\n

Salt and pepper<\/p>\n

Bunch of parsley, chopped<\/p>\n

125ml cr\u00e8me fraiche<\/p>\n

Nutmeg<\/p>\n

125ml white wine<\/p>\n

 <\/p>\n

Method:<\/p>\n

Boil potatoes with salt.<\/p>\n

Heat oil in a pan with lid.<\/p>\n

Add leeks and tomatoes and let soften for 2 minutes with the lid on.<\/p>\n

Add wine and salt and pepper. Taste First some sundried tomatoes are really salty.<\/p>\n

Cover with lid and let simmer for 10 minutes<\/p>\n

Drain potatoes, and add the cr\u00e8me fraich and nutmeg to taste, mash well.<\/p>\n

Add parsley to the leeks and add that to the potaotes.<\/p>\n

Season if needed.<\/p>\n
