Serve 4 as a vegetarian main or 8 as a vegetable side dish
800grams of (big winter) carrots
Cube of butter
50grams of pinenuts
50grams of raisins
Pinch of sugar (optional)
Handful of chooped parsley
Salt and pepper
Method:
Peel the carrot with a peeler and cut into 2 or 3 cm pieces.
Put the carrots in apan with water and salt and bring to the boil. Let boil for about 8 minutes or until al dente.
Drain the carrots and set aside.
In a large fryingpan metl the butter and add the pinenuts and raising and let them color slightly, add the carrots and the parsley and season to taste with salt and pepper, if neede a pinch of sugar.mix well and serve
