serves 4:
1 large head of broccoli
1 lemon, zest only
5-6 cloves of garlic, centres removen and sliced
4 tablespoons of olive oli
salt and pepper
method:
Bring a large pan of water with salt to the boil. Add the broccoli and cook for 4 mins or until just tender.
Meanwhile, heat the oil in a large frying pan, add the garlic, cook until lightly golden, then add the lemon zest and cook for 1 min more. When the broccoli is cooked, drain well, toss with the garlicky oil, season and serve.
my tips:
I steeped the oil the day before so the garlic and zest would really flavour the oil. I used half sunflower and half extra vergine olive oil.
