Mediterranean meatballs

meatballs in tomatosauce

Or what needs to be used up meatballs 😉

Good with crusty bread or pasta, rice even mashed potatoes!

 

 

I used:

For the meatballs:

500gram of beef mince

Breadcrumbs

1 egg

Salt, pepper, paprika powder

Oregano and thyme, chives

Garlic and onion powder

Worchestershire sauce to taste

 

For the sauce

1 green pepper chooped roughly

2 long sweet red peppers, chopped roughly

1 tin of sliced mushrooms

½ jar of  black olives, sliced

1 onion sliced

1 stalk of celery, chopped finely

1 carrot, chopped finely

Sunflower oil for the pan

1 small tin of tomato pure

500grams of tomato sauce (sifted tomatoes)

Water

Handful of cherry tomatoes

 

 

Method:

Add oil to a casserole, to cover the whole bottom, toss in the onion, carrots and celery, season with salt and pepper, cover and let simmer at low heat.

Meanwhile make the meatballs by mixing all the ingredients in a bowl and form 7-8 balls, set aside.

(i use onion and garlic powder in meatballs as chopped onion might remain quite raw, but you can use either).

If eating with pasta or rice etc, get it on now.

 

When the onions and carrot and celery have soften add  more oil if needed, turn heat up and Brown the meatballs on all sides.

 

Then add the remaining vegetables, the tomato puree and cook out for a minute before adding the tomato sauce, rinse the packet with water and add to the pan.

Cover and let simmer until meat balls are ready.

 

 

Tips: any vegetable that need using up could be used, infact I harvested a courgette today, But I forgot to add it;  think aubergine, broccoli, leeks, beans, spinach etc.
