Corn salad or as most commonly know in the UK lamb's lettuce is a relibale, easy to grow salad item. The nutty taste of the rounded leaves go very well with mushrooms and cheese or in a green salad. Lamb's lettuce provides valuable source of salad leaves throughout the autumn and winter months, although in teh winter the crop needs some protection, can be sown and grown in the greenhouse after all your summer crops finished producing. Not recommended for summer production as the plants will go to seed fairly quickly in the heat, but you can try to grow them in shady, cooler areas. This liitle gem is full of vitamin C, beta-carotene, Vitamin B6, B9, vitamin E, and omega-3 fatty acids.
Sow direct outside in March - April or August - September, or under protection in October - November. Sow the Lamb's lettuce seeds about 1 cm deep and thin the seedlings out leaving 10-15 cm between the plants and do eat the thinnings.
Pick the leaves or the whole plant as required, one sowing will provide a long harvest period.
