Acoustic is a high yielding second early variety that is very versatile in the kitchen. With a strong resistance to blight it produces high yields of round, pale skinned and creamy fleshed tubers. The texture of the tubers when harvested as a second early is waxy; ideal for salads and boiling but if left longer they develop a floury consistency that makes them perfect for baking, mashing and roasting. It is also suitable for organic gardens as it has a good resistance to stress and extreme weather conditions.

For best results plant in well-drained soil that has not been grown with onions, shallots or leeks for at least two years. The site should be in full sun and ideally not shaded by trees or bushes. 'Chitting' the seed potatoes in a cool, bright spot for 4-6 weeks before planting is recommended to help them to wake up and grow quickly and robustly. It is also a good idea to regularly earth up the growing plants to protect them from frost and direct sunlight which can cause them to green and rot.
